Four steps to the perfect steak
Iowa Beef Steakhouse owner Henry Schneider has been in the steak business for more than 25 years, so the man knows how to cook a steak. He gave some tips on making sure your steak gets done to perfection.
1. Get your steak to room temperature.
2 Make sure your fire is very hot.
3. Season it the way you want.
4. Don’t overcook it.
But how do you go about doing that? “By feel,” Schneider said. “The firmer it is, the more well done it is. Of course, some cuts of meat are softer and some are harder to begin with.
A (New York) strip is much firmer than a rib-eye. You have to get used to cooking to know.”
A common measure to get used to the feel of different levels of cooked meat is the finger test. Here’s how to do it: Relax and push a finger into the fleshy area at the base of your thumb with your hand open, that’s about the consistency of raw meat.
