Exile Brewing Company prepares to get bottled

Look for bottles of European-inspired lager to be shipping out downtown’s Exile Brewing Company by late January.

“Ruthie,” “Hannah” and “GiGi” — the brewery’s gold lager, Bavarian wheat and dark lager varieties, respectively — will for sure get bottled, said brewmaster John Woodford, 26. Seasonal varieties will likely make it into the mix too, he added.

All Woodford’s waiting on is the bottling line equipment, he said, machines of Italian make that will be housed on the brewpup’s second floor in downtown’s Western Gateway area.

“It will be a filler. It will have a labeler. It will have a case director and packer. Ideally probably four guys could run the whole thing,” Woodford said.  “It could be we bottle it on a Monday and it’s on shelves on Wednesday.”

Also in store for Exile’s upstairs quarters are a couple offices and what Woodford called a brewer laboratory.

“It’s going to look like a chemistry lab, decked out with glassware and a couple instruments we can use to maintain consistency,” said Woodford, a chemistry graduate from Iowa State University. “With all that stuff we can really hone in on making the best product possible.”
